GFCF Chocolate Muffins

Ingredients:
1 cup GF plain flour
1 cup GF self-raising flour
1 ½ cups castor sugar
½ cup GFCF baking cocoa
1 cup vegetable oil
1 cup GF soy milk
2 extra-large eggs
1 desert spoon vanilla essence
1 teaspoon guar gum
Instructions:
Preheat oven to 200 degrees celcius
Mix everything together into a smooth paste in a large mixing bowl
Line muffin spots with patty pans
¾ fill each patty pan with muffin mix
Bake for 35-40 minutes until skewer comes out cleanly
Enjoy!



If you substitute the vanilla essence for twice as much coffee essence you can make lovely mocha muffins!
